Description

A family Domaine created at the end of the 1960, where environmentally focused viticulture is practiced, specializing in particular in white wine from Santenay.

Cultural Method: Ancestral methods, without chemical weeding and synthetic products. Manual harvesting, transport of grapes in small crates, sorting on systematic table at reception.  

Winemaking & Ageing: Slow pressing. Winemaking exclusively was done with regular stirring until the end of the malolactic fermentation. Aging long 18 months with 12 months in oak barrels, on lees, without racking. (¼ new oak barrel…) End of aging in vats for 6 months and bottling on the estate, fining and light filtration. 

These field are neighbouring the Bievaux region, their steep slopes that face due  south produce a rich wine full of minerality. This wine is made for cellaring and will provide great pleasure during a meal and can be served with any meal that requires a white Burgundy.
