Sous Bois, means “under wood”. This unique cuvee entirely vinified in oak, is respectfully composed of the three champagne grape varieties, 33.3% each. Vinification and ageing take place in oak casks at low temperature, there’s partial malolactic fermentation, around one-third reserved wines and 6-7 years ageing on lees. It totally masters the art of blending by renewing the ancestral spirit and savoir faire of the original Champagnes.
